Garden fresh soup

Yesterday I cooked a tray of chicken pieces and put them into salad boxes for lunch for today and tomorrow for Tony and me.  I saved one decent sized piece and all the chicken stock that was produced in the cooking process.  It sets like jelly and makes a wonderful stock for soups and gravies. I've just put a big pan of soup on to simmer and added the chopped up chicken piece and stock, a tub of bone broth that I made last year and a whole host of veg fresh picked from the garden.

I simmered  beetroot, leeks, and swede in the chicken stock

Then I added some fresh picked and shredded sprout leaves, chopped celeriac , chopped Jerusalem artichokes and a shop bought carrot. I also added a small potato as I have some to use up.  Once it had simmered for a while I added a tub of bone broth and the chicken pieces.  I've added a chicken stock cube,  salt, pepper, paprika,  turmeric and chilli flakes. It already tastes gorgeous and I'll be leaving it to simmer for an hour before switching off the heat.  It'll warm up nicely for tea and I may make a loaf of soda bread if Tony wants bread with his soup.

Isn't simple home cooked food the best. And it's doubly nice if you've grown the veggies yourself.
