It's the time of year known in the veg gardening world as 'the hungry gap'. Winter veggies are coming to an end but the new seasons crop are a while away from being ready to pick. I needn't have worried though when I went out to collect leaves or the salads. I picked spinach, lettuce, rainbow chard, spring onions, beetroot leaves and the most beautiful carrot thinnings. They aren't much thicker than a pencil but have lovely long bodies and the most amazing taste. I added apples from our store and shop bought pickled beetroot, cucumber, tomatoes, basil and avocadoes. Roll on summer when I can pickle my own beetroot as I've planted absolutely loads. Some for leaves and some for the roots.
I'm already planning ahead so that this time next year I have even more variety to choose from.
